Ingredients

The base

  • ¾ cup dried chickpeas

The flavorings

  • cup tahini
  • ¼ cup lemon juice
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 2 large garlic cloves
  • ½ tsp salt
  • 1 tsp ground cumin
  • ¼ tsp smoked paprika (optional)
  • as needed water

Instructions

  1. Sprout the dried chickpeas for about 3 to 5 days.
  2. Once sprouted, rinse the chickpeas well and drain them.
  3. In a high-speed blender or food processor, combine the sprouted chickpeas with tahini, lemon juice, olive oil, apple cider vinegar, garlic, salt, cumin, and smoked paprika.
  4. Blend until smooth, adding water if necessary to achieve desired consistency.
  5. Serve immediately with fresh vegetables, tortillas, pita bread, or use in sandwiches.
