Ingredients

The Sauce

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 knob ginger, grated
  • ½ cup chicken or vegetable broth
  • ½ cup soy sauce
  • cup rice vinegar
  • ¼ cup sugar
  • 2 tablespoons tomato paste
  • 2 tablespoons cornstarch, dissolved in 1-2 tablespoons of cold water

The Batter

  • 1 cup flour
  • cup cornstarch
  • 1 ½ teaspoons baking powder
  • 2 teaspoons salt
  • 4 eggs
  • as needed cup water

Other Ingredients

  • 1 head cauliflower, cut into small florets
  • a deep layer of oil for frying
  • to taste scallions and sesame seeds for topping

Instructions

  1. Prepare the sauce by heating sesame oil in a saucepan and stir-frying garlic and ginger.
  2. Add the remaining sauce ingredients and whisk, then simmer until thickened.
  3. Mix the batter ingredients until a loose batter forms, adjusting with water as necessary.
  4. Heat oil in a skillet for frying and test readiness with a small amount of batter.
  5. Dip cauliflower florets in the batter and fry until golden brown, flipping as needed.
  6. Remove fried cauliflower and let drain on paper towels.
  7. Toss the fried cauliflower with the sauce and serve topped with scallions and sesame seeds.
