General Tso's Cauliflower

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with nonstick cooking spray.
- Wash and dry the cauliflower, then cut it into bite-sized florets.
- In a medium bowl, whisk the eggs to create an egg wash.
- In a large bowl, mix the breadcrumbs, sesame seeds, garlic powder, coconut sugar, and salt for the breading.
- Dip each cauliflower floret in the egg wash, ensuring it's fully coated.
- Coat each floret in the breadcrumb mixture and place them on the baking sheet.
- Bake the cauliflower for 15 minutes, then flip each piece and bake for another 10 minutes.
- While the cauliflower is baking, prepare the sauce by mixing the chili garlic sauce, soy sauce, orange juice, tomato paste, sriracha, and honey in a large bowl.
- Once the cauliflower is done, let it cool for 5 minutes, then toss it in the sauce until fully coated.
- Serve the coated cauliflower on top of your favorite grain, garnished with sesame seeds and red pepper flakes.
