General Tso's Chicken

Instructions
- Preheat the oven to 475°F and prepare a baking sheet with a wire rack.
- Set up three shallow dishes for dredging: one with flour, one with whisked egg whites, and one with crushed corn flakes.
- Dredge the chicken pieces in flour, dip in egg whites, and coat with corn flakes, then place on the wire rack.
- Spray the chicken with vegetable oil spray and bake for 12-15 minutes until cooked through and crispy.
- While the chicken is baking, prepare the sauce by whisking together water, soy sauce, apricot jam, hoisin sauce, cornstarch, and balsamic vinegar.
- Heat oil in a skillet, add minced garlic, ginger, and red pepper flakes, and cook until fragrant.
- Add the sauce mixture to the skillet, bring to a simmer, and cook until thickened.
- Once the chicken is done, toss it in the sauce and serve immediately.
