Ingredients

  • lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 3 large egg whites
  • ¼ cup all purpose flour
  • 5 cups Kellog’s Corn Flakes, finely crushed
  • 1⅔ cup water
  • cup low sodium soy sauce
  • ¼ cup apricot jam
  • 3 tablespoons hoisin sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons canola oil or Chili Olive Oil
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • ¼ teaspoon red pepper flakes
  • 1 spray vegetable oil spray

Instructions

  1. Preheat the oven to 475°F and prepare a baking sheet with a wire rack.
  2. Set up three shallow dishes for dredging: one with flour, one with whisked egg whites, and one with crushed corn flakes.
  3. Dredge the chicken pieces in flour, dip in egg whites, and coat with corn flakes, then place on the wire rack.
  4. Spray the chicken with vegetable oil spray and bake for 12-15 minutes until cooked through and crispy.
  5. While the chicken is baking, prepare the sauce by whisking together water, soy sauce, apricot jam, hoisin sauce, cornstarch, and balsamic vinegar.
  6. Heat oil in a skillet, add minced garlic, ginger, and red pepper flakes, and cook until fragrant.
  7. Add the sauce mixture to the skillet, bring to a simmer, and cook until thickened.
  8. Once the chicken is done, toss it in the sauce and serve immediately.
