General Tso's Chicken

Instructions
- Combine chicken with 2 tablespoons soy sauce, 3 tablespoons cornstarch, and egg white in a bowl and set aside.
- Mince garlic and ginger, and chop scallions, separating whites from greens.
- Sauté ginger, garlic, and scallion whites in sesame oil for 1 minute in a small pot.
- Add chicken broth, remaining soy sauce, sriracha, and hoisin to the pot, whisking to combine.
- Whisk in remaining cornstarch and cook until sauce thickens, about 2 minutes, then keep warm.
- Heat a wok or skillet over medium-high heat and cook chicken in batches with sesame oil until browned and cooked through.
- Return chicken to the skillet, add sauce, and toss to coat.
- Garnish with scallion greens and sesame seeds, then serve immediately.
