Ingredients

The chicken

  • 1 pound boneless, skinless chicken breast, cut into bite-size pieces
  • ¼ cup reduced sodium soy sauce, divided
  • ¼ cup cornstarch, divided
  • 1 large egg white

The sauce

  • 1 inch piece peeled fresh ginger
  • 2 cloves garlic
  • 2 medium scallions, whites and greens separated
  • 1 cup reduced sodium chicken broth
  • 1 teaspoon sriracha sauce, plus more for serving
  • 3 tablespoons hoisin
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon toasted sesame oil
  • to taste sesame seeds, for garnish

Instructions

  1. Combine chicken with 2 tablespoons soy sauce, 3 tablespoons cornstarch, and egg white in a bowl and set aside.
  2. Mince garlic and ginger, and chop scallions, separating whites from greens.
  3. Sauté ginger, garlic, and scallion whites in sesame oil for 1 minute in a small pot.
  4. Add chicken broth, remaining soy sauce, sriracha, and hoisin to the pot, whisking to combine.
  5. Whisk in remaining cornstarch and cook until sauce thickens, about 2 minutes, then keep warm.
  6. Heat a wok or skillet over medium-high heat and cook chicken in batches with sesame oil until browned and cooked through.
  7. Return chicken to the skillet, add sauce, and toss to coat.
  8. Garnish with scallion greens and sesame seeds, then serve immediately.
