Ingredients

The sauce

  • ½ cup hoisin sauce
  • ¼ cup rice vinegar
  • 3 Tbsp low-sodium soy sauce
  • 3 Tbsp packed light-brown sugar
  • 2 Tbsp cornstarch
  • cups low-sodium chicken broth

The chicken

  • lbs boneless skinless chicken breasts, diced into 1-inch pieces
  • 1 Tbsp vegetable oil
  • 2 green onions, sliced, greens and whites divided
  • 4 cloves garlic, minced
  • 2 Tbsp finely grated fresh ginger
  • ½ tsp red pepper flakes, or to taste

Coating

  • 3 egg whites
  • cups cornstarch
  • ½ cup all-purpose flour
  • ½ tsp baking soda
  • Salt and white or black pepper, as desired
  • 4 cups vegetable oil, for frying

Instructions

  1. Whisk together the sauce ingredients in a bowl.
  2. Marinate the chicken in 6 tablespoons of the sauce for 30 minutes.
  3. Sauté the green onions, garlic, ginger, and red pepper flakes in a skillet.
  4. Add 2 cups of the sauce to the skillet and cook until thickened.
  5. Whisk the egg whites until foamy in a small dish.
  6. In another dish, mix cornstarch, flour, baking soda, and the remaining sauce.
  7. Coat the marinated chicken in egg whites, then in the flour mixture.
  8. Fry the chicken pieces in batches until golden brown.
  9. Toss the fried chicken with the thickened sauce and serve warm.
