General Tso's Chicken

The chicken

boneless skinless chicken breasts, diced into 1-inch pieces

green onions, sliced, greens and whites divided

vegetable oil, for frying
Instructions
- Whisk together the sauce ingredients in a bowl.
- Marinate the chicken in 6 tablespoons of the sauce for 30 minutes.
- Sauté the green onions, garlic, ginger, and red pepper flakes in a skillet.
- Add 2 cups of the sauce to the skillet and cook until thickened.
- Whisk the egg whites until foamy in a small dish.
- In another dish, mix cornstarch, flour, baking soda, and the remaining sauce.
- Coat the marinated chicken in egg whites, then in the flour mixture.
- Fry the chicken pieces in batches until golden brown.
- Toss the fried chicken with the thickened sauce and serve warm.
