Ingredients

The chicken

  • 10 oz boneless skinless chicken meat
  • ½ tablespoon Shaoxing wine
  • 1 pinch salt
  • cup cornstarch
  • oil for deep frying
  • tablespoons oil
  • 3 slices ginger
  • 1 clove garlic
  • 4-5 dried red chilies
  • 2 stalks scallion

The sauce

  • 2½-3 tablespoons Chinese rice vinegar
  • tablespoons soy sauce
  • ½ tablespoon dark soy sauce
  • 1 teaspoon Hoisin sauce
  • ¼ cup water
  • tablespoons sugar
  • ½ tablespoon Shaoxing wine
  • 1 tablespoon cornstarch

Instructions

  1. Marinate the chicken with Shaoxing wine and salt for 15 minutes.
  2. Mix all the ingredients for the sauce in a small bowl and set aside.
  3. Coat the chicken generously with cornstarch.
  4. Heat oil for deep-frying and fry the chicken until light brown.
  5. Remove the chicken and drain excess oil on paper towels.
  6. Heat a wok with oil and stir-fry ginger, garlic, and dried chilies until fragrant.
  7. Pour the sauce into the wok and cook until it thickens.
  8. Add the chicken to the sauce and stir to combine.
  9. Add scallions and stir a few times before serving.
