Instructions
- Marinate the chicken with Shaoxing wine and salt for 15 minutes.
- Mix all the ingredients for the sauce in a small bowl and set aside.
- Coat the chicken generously with cornstarch.
- Heat oil for deep-frying and fry the chicken until light brown.
- Remove the chicken and drain excess oil on paper towels.
- Heat a wok with oil and stir-fry ginger, garlic, and dried chilies until fragrant.
- Pour the sauce into the wok and cook until it thickens.
- Add the chicken to the sauce and stir to combine.
- Add scallions and stir a few times before serving.
