General Tso's Tofu

Instructions
- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper and slice the tofu into 1-inch cubes.
- Pat the tofu with a paper towel to remove excess moisture.
- In a bag or container, toss the tofu with olive oil, corn starch, and salt.
- Spread the tofu in a single layer on the baking sheet and bake for 25-30 minutes until golden brown.
- In a small saucepan, combine rice vinegar, soy sauce, hoisin sauce, tomato paste, sugar, ground ginger, garlic powder, and red pepper flakes (if using).
- Add ¾ cup of vegetable broth and stir to combine, then bring to a simmer over medium-high heat.
- In a separate bowl, mix 1 tablespoon of corn starch with 1 tablespoon of vegetable broth to create a slurry.
- Add the slurry to the simmering sauce and reduce the heat to medium-low, simmering until thickened.
- Stir the baked tofu into the sauce and serve with rice and broccoli.
