Ingredients

The tofu

  • 14 ounce extra firm tofu
  • 1 tablespoon olive oil
  • 1 tablespoon corn starch
  • ¼ teaspoon salt

The sauce

  • 3 tablespoons rice vinegar
  • 3 tablespoons reduced sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon tomato paste
  • 1-2 tablespoons white sugar
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • ¾ cup vegetable broth
  • 1 tablespoon corn starch
  • 3 cups cooked white rice
  • 2 cups broccoli

Instructions

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment paper and slice the tofu into 1-inch cubes.
  3. Pat the tofu with a paper towel to remove excess moisture.
  4. In a bag or container, toss the tofu with olive oil, corn starch, and salt.
  5. Spread the tofu in a single layer on the baking sheet and bake for 25-30 minutes until golden brown.
  6. In a small saucepan, combine rice vinegar, soy sauce, hoisin sauce, tomato paste, sugar, ground ginger, garlic powder, and red pepper flakes (if using).
  7. Add ¾ cup of vegetable broth and stir to combine, then bring to a simmer over medium-high heat.
  8. In a separate bowl, mix 1 tablespoon of corn starch with 1 tablespoon of vegetable broth to create a slurry.
  9. Add the slurry to the simmering sauce and reduce the heat to medium-low, simmering until thickened.
  10. Stir the baked tofu into the sauce and serve with rice and broccoli.
