Shaved Asparagus and Mushroom Pizza

Ingredients

Dough

  • ¼ recipe Whole wheat pizza crust

Sauce

  • 1 small clove garlic, crushed
  • 2 pieces green onions, chopped
  • 1 tbsp olive oil
  • 1 tbsp whole wheat flour
  • ½ cup unsweetened soy milk
  • a pinch salt & pepper

Toppings

  • 6 pieces button mushrooms, sliced
  • 12 pieces asparagus, shaved
  • 75 g low fat mozzarella cheese, grated
  • 25 g emmenthal cheese, grated

Instructions

  1. Preheat the oven to 500°F.
  2. In a saucepan, heat olive oil and sauté green onions and garlic until fragrant.
  3. Add flour and whisk, then slowly pour in soy milk and whisk until thickened.
  4. Roll the dough into a 10-12 inch disc and place on a baking sheet.
  5. Spread the sauce on the dough, add half the mushrooms, mozzarella cheese, shaved asparagus, remaining mushrooms, and emmenthal cheese.
  6. Bake for about 10 minutes until the cheese is melted and slightly browned.
