Instructions
- Combine split yellow peas, 5 cups of water, garlic, ¾ of the chopped onion, and 1 tablespoon of olive oil in a pot and bring to a boil.
- Reduce heat to medium-low and simmer for 40-45 minutes, stirring occasionally, until the peas are soft and mushy, adding more water if needed.
- Remove from heat and mash the mixture until creamy, adjusting the consistency with more liquid if necessary, and season with salt and pepper.
- Serve on a platter topped with the remaining chopped onion, olives, capers, and a drizzle of olive oil, alongside toasted whole grain bread.
