Greek Fava

Ingredients

The base

  • 2 cups split yellow peas
  • 5–6 cups water
  • 2 cloves garlic
  • 1 medium onion, chopped
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper

The toppings

  • 10 Greek olives
  • 1 tablespoon capers, rinsed and drained

Instructions

  1. Combine split yellow peas, 5 cups of water, garlic, ¾ of the chopped onion, and 1 tablespoon of olive oil in a pot and bring to a boil.
  2. Reduce heat to medium-low and simmer for 40-45 minutes, stirring occasionally, until the peas are soft and mushy, adding more water if needed.
  3. Remove from heat and mash the mixture until creamy, adjusting the consistency with more liquid if necessary, and season with salt and pepper.
  4. Serve on a platter topped with the remaining chopped onion, olives, capers, and a drizzle of olive oil, alongside toasted whole grain bread.
