The apple mixture

honeycrisp apples, peeled, cored, and quartered

cups
sweetened apple cider

water
Juice of 1
lemon
The sweetening and spices

white sugar

tablespoon
ground cinnamon
Instructions
Combine the apples, apple cider, water, and lemon juice in a large Dutch oven.
Bring the mixture to a boil, then lower to a simmer and cover.
Cook for about 30 minutes or until the apples are mushy, then puree with an immersion blender.
Stir in the sugar and cinnamon.
Cook on medium-low heat uncovered for about an hour, stirring frequently until thickened.
Allow to cool and store in a sealed container in the refrigerator.
