Ingredients

The apples

  • 2 pounds Macintosh apples
  • 2 pounds Fuji apples

The mixture

  • 1 cup apple cider
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt

Instructions

  1. Combine apple slices and apple cider in a large Dutch oven over medium-high heat and bring to a boil.
  2. Cover and reduce heat to medium-low, then simmer until apples are very soft, about 30 to 35 minutes.
  3. Transfer the softened apples to a food processor and blend until smooth.
  4. In a heavy-bottomed saucepan, combine the apple puree with granulated sugar, brown sugar, lemon juice, and salt.
  5. Simmer the mixture over medium-low heat until it thickens and browns, about 60 to 90 minutes.
  6. Transfer the apple butter to a jar and let it cool to room temperature before refrigerating.
