Vegan Split Pea Soup

Ingredients

The soup base

  • 2 cloves garlic
  • 1 medium yellow onion
  • 3 ribs celery
  • 3 medium carrots
  • 2 Tbsp olive oil
  • 1 lb. split peas (dry)
  • 6 cups water
  • 1.5 tsp salt (or to taste)

The seasonings

  • ½ tsp smoked paprika
  • 1 tsp dried parsley
  • ½ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp freshly cracked pepper

Instructions

  1. Mince the garlic and dice the onion, celery, and carrots.
  2. Sauté the garlic, onion, celery, and carrots in olive oil over medium heat until the onions are soft.
  3. Add the split peas, smoked paprika, parsley, oregano, thyme, pepper, and water to the pot and stir to combine.
  4. Cover the pot, increase the heat to medium-high, and bring to a boil.
  5. Once boiling, reduce the heat to medium-low and let the soup simmer for about 45 minutes, stirring occasionally until thickened.
  6. Add salt to taste, starting with ½ tsp, and adjust as needed.
  7. Serve hot with crackers or crusty bread.
