Vegan Split Pea Soup

Instructions
- Mince the garlic and dice the onion, celery, and carrots.
- Sauté the garlic, onion, celery, and carrots in olive oil over medium heat until the onions are soft.
- Add the split peas, smoked paprika, parsley, oregano, thyme, pepper, and water to the pot and stir to combine.
- Cover the pot, increase the heat to medium-high, and bring to a boil.
- Once boiling, reduce the heat to medium-low and let the soup simmer for about 45 minutes, stirring occasionally until thickened.
- Add salt to taste, starting with ½ tsp, and adjust as needed.
- Serve hot with crackers or crusty bread.
