Spicy Shrimp with Chilies and Garlic

Ingredients

The shrimp

  • pounds peeled and deveined medium shrimp

The seasoning

  • to taste kosher salt
  • to taste freshly ground black pepper

The cooking ingredients

  • 1 tablespoon extra-virgin olive oil
  • 3 to 4 dried chilies, roughly chopped
  • 5 cloves garlic, crushed
  • 1 lemon juice of
  • 3 tablespoons chopped fresh parsley

Instructions

  1. Season the shrimp with salt and pepper.
  2. Heat a large nonstick skillet over medium heat and add ½ tablespoon of oil and half of the chilies, cooking for 1 to 2 minutes.
  3. Increase the heat to medium-high, add half of the shrimp, and cook undisturbed for about 1½ minutes.
  4. Turn the shrimp over and cook until opaque throughout, about 1 minute, then transfer to a plate.
  5. Add the remaining ½ tablespoon of oil and remaining chilies to the pan, cooking for 1 to 2 minutes.
  6. Add the remaining shrimp to the pan and cook undisturbed for about 1½ minutes.
  7. Turn the shrimp over, add the garlic, and cook until the shrimp is opaque throughout, about 1 minute.
  8. Return the first batch of shrimp to the skillet, mix well, and remove from heat.
  9. Squeeze lemon juice over the shrimp, add parsley, and toss well.
  10. Serve with crusty whole wheat bread and a salad.
