Smoky Parmesan Roasted Cauliflower

Ingredients

The seasoning mix

  • 1 Tbsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • to taste freshly cracked pepper
  • ¼ cup grated Parmesan

The cauliflower

  • 1 ½ Tbsp olive oil
  • 1 head cauliflower

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with foil and non-stick spray.
  2. Mix the smoked paprika, oregano, garlic powder, salt, pepper, and Parmesan in a small bowl.
  3. Remove leaves from the cauliflower and cut it into small florets.
  4. Drizzle the florets with olive oil and toss to coat evenly.
  5. Add about ¾ of the seasoning mix to the florets and toss again.
  6. Spread the florets on the baking sheet in a single layer and sprinkle with remaining seasoning mix.
  7. Roast in the oven for 40-45 minutes until browned and tender, serving hot.
