Ingredients

The cauliflower

  • 1 head cauliflower

The seasoning

  • ¼ cup grated Parmesan
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper

The oil

  • 2 Tbsp olive oil

The garnish

  • 1 Tbsp chopped parsley (optional)

Instructions

  1. Preheat the oven to 400ºF.
  2. Rinse the cauliflower and cut it into bite-sized florets.
  3. In a small bowl, mix the Parmesan, garlic powder, salt, and pepper.
  4. Place the cauliflower florets in a bowl, drizzle with olive oil, and add the seasoning mix.
  5. Toss the florets until they are well coated in oil and seasoning.
  6. Spread the seasoned cauliflower on a baking sheet lined with parchment paper in a single layer.
  7. Roast in the oven for about 30 minutes, stirring halfway through, until caramelized.
  8. Season with extra salt and pepper, and sprinkle with chopped parsley before serving, if desired.
