Roasted Garlic-Parmesan Cauliflower

Ingredients

The vegetables

  • 1 head cauliflower

The seasoning and oil

  • 3-4 tbs olive oil
  • 3-4 cloves garlic, minced
  • kosher salt
  • black pepper

The cheese

  • 2-3 tbs crumbled Parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Heat olive oil and minced garlic in the microwave for about 20 seconds.
  3. Remove the stem and leaves from the cauliflower and cut it into large florets, slicing each floret into ¼ inch slices.
  4. Place the cauliflower on a foil-lined baking sheet and drizzle with the oil and garlic mixture, then sprinkle with kosher salt and black pepper.
  5. Toss the cauliflower to coat it evenly, adding more olive oil if needed.
  6. Bake for 15 minutes, then toss with a spatula.
  7. Bake for an additional 10 minutes, then toss with Parmesan cheese.
  8. Continue baking for 5-10 minutes until the edges are slightly golden brown.
