Roasted Garlic-Parmesan Cauliflower

Instructions
- Preheat the oven to 400°F.
- Heat olive oil and minced garlic in the microwave for about 20 seconds.
- Remove the stem and leaves from the cauliflower and cut it into large florets, slicing each floret into ¼ inch slices.
- Place the cauliflower on a foil-lined baking sheet and drizzle with the oil and garlic mixture, then sprinkle with kosher salt and black pepper.
- Toss the cauliflower to coat it evenly, adding more olive oil if needed.
- Bake for 15 minutes, then toss with a spatula.
- Bake for an additional 10 minutes, then toss with Parmesan cheese.
- Continue baking for 5-10 minutes until the edges are slightly golden brown.
