Easy Parmesan-Roasted Cauliflower Florets

Ingredients

The vegetables

  • 1 head cauliflower
  • 1 medium onion
  • 4 sprigs thyme
  • 4 cloves garlic

The seasoning and oil

  • 3 to 4 tablespoons olive oil
  • to taste Kosher salt
  • to taste black pepper

The cheese

  • ½ cup grated Parmigiano Reggiano

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the cauliflower florets, sliced onion, thyme, unpeeled garlic, and olive oil on a large baking sheet; season with salt and pepper.
  3. Roast for about 30 to 40 minutes, tossing occasionally, until almost tender.
  4. Sprinkle Parmesan cheese over the mixture, toss to combine, and roast for an additional 10 minutes until golden.
