Greek Yogurt Biscuits

Instructions
- Preheat the oven to 400°F and line two large baking sheets with parchment paper.
- In a mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse meal.
- In a small bowl, whisk together the Greek yogurt, beaten egg, and cold water.
- Add the liquid ingredients to the flour mixture and stir until the dough barely comes together.
- Dump the mixture onto a lightly floured counter and knead until it comes together, being careful not to overwork it.
- Roll out the dough into a 1-inch thick circle and cut into rounds or squares.
- Place the biscuits on the prepared baking sheets and brush with the egg wash.
- Bake for 12-15 minutes until golden brown and serve warm.
