Ingredients

The base

  • 1 cup uncooked brown rice
  • ½ cup uncooked quinoa

The seeds

  • 4 T ground flax
  • 2 T sesame seeds
  • 2 T whole flax seeds
  • 1-2 T chia seeds

The flavorings

  • 1 T water
  • 1 t garlic
  • 1 t tahini
  • 1 t sea salt
  • to taste herbs (e.g., dill)

Instructions

  1. 1. Preheat the oven to 300°F.
  2. 2. Cook the brown rice and quinoa according to package directions in separate pots.
  3. 3. Allow the rice and quinoa to cool after cooking.
  4. 4. In a food processor, blend the cooked rice, quinoa, ground flax, water, herbs, tahini, and salt until smooth.
  5. 5. Stir in the sesame seeds, whole flax seeds, and chia seeds, or press them on top of the dough.
  6. 6. Scoop the mixture onto a greased baking sheet or parchment paper and flatten with wet hands.
  7. 7. Roll the mixture with a pastry roller to smooth it out.
  8. 8. Cut the dough into desired cracker shapes using a pastry cutter or pizza slicer.
  9. 9. Bake in the oven for 35-40 minutes until golden, flipping halfway through if desired.
  10. 10. Cool on the baking sheet for 15 minutes before breaking apart.
