Instructions
- 1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
- 2. Blend the chickpeas and quinoa until smooth in a blender or food processor.
- 3. Add salt, pepper, gluten-free flour blend, xanthan gum, vegetable shortening, and nutritional yeast to the mixture.
- 4. Gradually add three tablespoons of water while the machine is running until a dough forms.
- 5. Roll out the dough to a thickness of ⅛ inch.
- 6. Brush the dough with almond milk and cut it into rectangle shapes.
- 7. Arrange the rectangles on the baking sheets and sprinkle with sesame seeds and coarse sea salt.
- 8. Bake for 30 to 35 minutes.
- 9. Allow the crackers to cool on the baking sheets before storing them in an airtight container.
