Ingredients

The crackers

  • 4 cups cooked quinoa
  • 2 cups ground flax seed
  • 1 tablespoon psyllium husks
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 2 cups water

The toppings

  • to taste sunflower seeds
  • to taste sesame seeds
  • to taste poppy seeds
  • to taste fried onions

Instructions

  1. Mix ground flax, psyllium husks, salt, and water in a large bowl.
  2. Blend oil and cooked quinoa with the flax mixture.
  3. Divide the dough between two parchment-lined baking sheets and flatten it with wet hands.
  4. Cover the dough with plastic wrap and roll it out to ¼ inch thickness.
  5. Sprinkle toppings on the rolled-out dough and press them down gently.
  6. Bake at 350°F for 40 minutes until the dough is cooked but not crisp.
  7. Flip the crackers, remove parchment, and cut into pieces.
  8. Bake for another 40-45 minutes until the crackers are crisp.
