Ingredients

The base

  • 2 cups smooth peanut butter
  • cups old fashioned oats
  • ¼ cup maple syrup
  • 2 tablespoons cocoa powder
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract

The topping

  • 3 ounces baking chocolate or chocolate chips
  • to taste flaked sea salt (optional)

Instructions

  1. 1. In a medium bowl, mix together all ingredients except the baking chocolate and salt until combined.
  2. 2. Prepare an 8x8 baking dish with cooking spray or parchment paper for thin bars, or use a 9x3 loaf pan for thicker bars.
  3. 3. Press the mixture evenly into the prepared dish.
  4. 4. Melt the baking chocolate in the microwave or on the stovetop, stirring frequently.
  5. 5. Drizzle the melted chocolate over the top of the bars and sprinkle with flaked sea salt if desired.
  6. 6. Cover and freeze for at least one hour before slicing into pieces.
