Ingredients

The pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • ¼ cup canola oil or vegetable oil
  • 1 teaspoon vanilla extract

Cinnamon Streusel

  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cut into chunks

Instructions

  1. Make the cinnamon streusel by mixing flour, brown sugar, cinnamon, and butter until crumbly.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together buttermilk, eggs, oil, and vanilla.
  4. Combine wet and dry ingredients, stirring until just mixed, leaving the batter slightly lumpy.
  5. Heat a griddle or pan over medium-low heat and coat with cooking spray.
  6. Pour 1 cup of batter onto the skillet and sprinkle with 2 tablespoons of cinnamon streusel.
  7. Cook until bubbles form, then flip and cover generously with more cinnamon streusel.
  8. Cook until golden brown, then repeat with remaining batter.
  9. Serve warm with maple syrup and butter.
