Instructions
- Make the cinnamon streusel by mixing flour, brown sugar, cinnamon, and butter until crumbly.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, eggs, oil, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed, leaving the batter slightly lumpy.
- Heat a griddle or pan over medium-low heat and coat with cooking spray.
- Pour 1 cup of batter onto the skillet and sprinkle with 2 tablespoons of cinnamon streusel.
- Cook until bubbles form, then flip and cover generously with more cinnamon streusel.
- Cook until golden brown, then repeat with remaining batter.
- Serve warm with maple syrup and butter.
