Ingredients

The pancake batter

  • 1 cup all-purpose flour
  • tsp baking powder
  • 2 Tbsp sugar
  • 1 cup milk
  • 1 large egg
  • 4 Tbsp butter, divided
  • 1 tsp vanilla extract
  • ¼ tsp salt

The cinnamon swirl

  • 1 tsp cinnamon
  • 2 tsp brown sugar

Instructions

  1. Preheat the oven to 425ºF.
  2. In a large bowl, mix the flour, baking powder, sugar, and salt.
  3. In a separate bowl, whisk together the milk, egg, vanilla, and 2 Tbsp melted butter.
  4. Combine the wet and dry ingredients, stirring until just mixed, then let sit for five minutes.
  5. Prepare the cinnamon swirl by mixing 1 Tbsp melted butter with cinnamon and brown sugar.
  6. Heat 1 Tbsp butter in a 10-inch oven-safe skillet over medium heat until sizzling, then coat the skillet.
  7. Pour the pancake batter into the skillet, drizzle the cinnamon mixture on top, and swirl it in.
  8. Bake in the oven for about 18 minutes until puffed and golden brown.
  9. Slice into eight pieces and serve.
