Beef and Cheese Crunch Wraps

Ingredients

The filling

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 15-ounce can black beans
  • 2 cups Pepperjack cheese, shredded
  • 2 medium-large avocados

The wrap

  • 8 burrito-size tortillas tortillas
  • as needed oil or cooking spray oil or cooking spray

Instructions

  1. Preheat the oven to 400℉ and place a sheet pan inside.
  2. Heat a large skillet over medium heat and brown the ground beef, draining any excess fat.
  3. Add the taco seasoning to the beef and stir to combine, adding water if necessary.
  4. Stir in the black beans until combined.
  5. Lay out the tortillas and place a handful of cheese in the center of each, about a 3-inch circle.
  6. Divide the beef and bean mixture among the tortillas, placing it on top of the cheese.
  7. Slice or dice the avocados and add them on top of the beef mixture, then top with more cheese.
  8. Wrap each tortilla by folding the sides into the center and placing seam-side down.
  9. Drizzle oil on each wrap and massage it in gently.
  10. Remove the hot sheet pan from the oven and place the wraps seam-side down on it.
  11. Bake for 10 minutes, then flip and bake for another 10 minutes until golden and crispy.
  12. Cut in half if desired and add toppings before serving, or serve as is.
