Grilled Salmon with Cherry Glaze

Ingredients

The salmon

  • 4 filets salmon, skin on

The glaze

  • cup chopped shallots
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 2 cups fresh or frozen cherries
  • cup red cooking wine
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground pepper

Instructions

  1. Sauté shallots and garlic in olive oil until tender.
  2. Add remaining glaze ingredients to the pot and bring to a boil.
  3. Simmer the glaze for about 20 minutes until thickened.
  4. Prepare the grill for medium heat at about 350 degrees.
  5. Oil the grill grates very well to prevent sticking.
  6. Place salmon on the grates and cook for 15-20 minutes until the internal temperature reaches 140 degrees.
  7. During the last 5 minutes of cooking, add the glaze to the salmon.
  8. Serve with remaining glaze.
