Grilled Salmon with Cherry Glaze

red cooking wine

balsamic vinegar

fresh ground pepper
Instructions
- Sauté shallots and garlic in olive oil until tender.
- Add remaining glaze ingredients to the pot and bring to a boil.
- Simmer the glaze for about 20 minutes until thickened.
- Prepare the grill for medium heat at about 350 degrees.
- Oil the grill grates very well to prevent sticking.
- Place salmon on the grates and cook for 15-20 minutes until the internal temperature reaches 140 degrees.
- During the last 5 minutes of cooking, add the glaze to the salmon.
- Serve with remaining glaze.
