Ingredients

The salmon

  • 4 filets wild caught salmon
  • 1 dash sea salt
  • 1 dash fresh ground pepper

Cherry Thyme Glaze

  • 2 tbsp butter
  • 1 large shallot, finely chopped
  • 1 jar cherry preserves (18 oz)
  • ¼ cup red wine vinegar
  • 1 large bunch thyme

Instructions

  1. Melt butter in a saucepan and sauté shallots until translucent.
  2. Add cherry preserves and red wine vinegar, bring to a low boil, and let simmer for about 30 minutes until reduced by half.
  3. Prepare the grill for direct heat at 350 degrees.
  4. Butter a cast iron pan or griddle and add the salmon filets.
  5. Cook the salmon until the internal temperature reaches 145 degrees, about 15-20 minutes depending on thickness.
  6. Spoon the cherry glaze over the salmon and garnish with additional thyme before serving.
