Instructions
- Melt butter in a saucepan and sauté shallots until translucent.
- Add cherry preserves and red wine vinegar, bring to a low boil, and let simmer for about 30 minutes until reduced by half.
- Prepare the grill for direct heat at 350 degrees.
- Butter a cast iron pan or griddle and add the salmon filets.
- Cook the salmon until the internal temperature reaches 145 degrees, about 15-20 minutes depending on thickness.
- Spoon the cherry glaze over the salmon and garnish with additional thyme before serving.
