The balsamic glaze

Instructions
- Let the salmon rest at room temperature for 10-15 minutes.
- In a saucepan, combine balsamic vinegar, white wine, honey, Dijon mustard, rosemary, and garlic, then bring to a boil.
- Reduce heat and simmer until thickened, about 10-15 minutes.
- Strain the glaze through a fine strainer into a heatproof dish and set aside.
- Season both sides of the salmon with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the salmon until browned on the bottom, about 3-4 minutes.
- Flip the salmon and cook for an additional 2-3 minutes until cooked through.
- Serve the salmon warm, drizzled with the balsamic glaze and garnished with rosemary or parsley if desired.
