Balsamic Glazed Salmon

Ingredients

The salmon

  • 4 pieces salmon fillets
  • to taste salt
  • to taste black pepper
  • 2 tsp olive oil
  • to taste fresh rosemary or parsley (for garnish)

The balsamic glaze

  • ½ cup balsamic vinegar
  • ¼ cup white wine or low-sodium chicken broth
  • 2 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 sprig rosemary
  • 1 clove garlic (minced)

Instructions

  1. Let the salmon rest at room temperature for 10-15 minutes.
  2. In a saucepan, combine balsamic vinegar, white wine, honey, Dijon mustard, rosemary, and garlic, then bring to a boil.
  3. Reduce heat and simmer until thickened, about 10-15 minutes.
  4. Strain the glaze through a fine strainer into a heatproof dish and set aside.
  5. Season both sides of the salmon with salt and pepper.
  6. Heat olive oil in a skillet over medium-high heat and cook the salmon until browned on the bottom, about 3-4 minutes.
  7. Flip the salmon and cook for an additional 2-3 minutes until cooked through.
  8. Serve the salmon warm, drizzled with the balsamic glaze and garnished with rosemary or parsley if desired.
