Raspberry Balsamic Glazed Salmon

Ingredients

  • 1 ¼ – 1 ½ lb. wild-caught salmon fillets
  • 2 tsp. ghee or avocado oil
  • 2 cloves garlic, minced
  • 2 dates chopped
  • 3 Tbsp. balsamic vinegar
  • 1 cup Driscoll’s raspberries
  • 1 ½ tsp. fresh thyme leaves
  • ¼ tsp. salt
  • Salt and Pepper to taste

Instructions

  1. Heat ghee or avocado oil in a small saucepan over medium-low heat until shimmering.
  2. Add minced garlic and cook for 30 seconds, stirring continuously.
  3. Stir in chopped dates, balsamic vinegar, and raspberries, cooking until thickened (about 5-6 minutes).
  4. Remove from heat and mix in thyme and salt; optionally strain the sauce to remove seeds.
  5. Preheat the broiler and position the rack 5-6 inches below the broiler element.
  6. Place salmon fillets skin side down on a baking sheet, seasoning with salt and pepper.
  7. Brush each fillet with 2-3 tablespoons of the sauce.
  8. Broil the salmon for 8-10 minutes until opaque and flakes easily with a fork.
  9. Serve salmon with additional sauce.
