Ingredients

The salad

  • 1 pouch (3-ounce) canned wild salmon, drained
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • teaspoon freshly ground black pepper
  • 1 tablespoon fresh basil, cut into thin strips (or ¼ teaspoon dried)

Accompaniments

  • to taste whole-grain crackers
  • to taste vegetable crudités
  • to taste roasted bell pepper strips

Instructions

  1. Combine the salmon, olive oil, balsamic vinegar, and black pepper in a bowl.
  2. Stir with a fork to break up large chunks of salmon.
  3. Sprinkle in the fresh basil and mix well.
  4. Enjoy immediately or chill for up to 3 days before serving.
  5. Serve with your choice of accompaniments.
