Ingredients

Wet Ingredients

  • ¾ cup mashed ripe banana
  • ¾ cup unsweetened almond milk
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup coconut oil, melted

Dry Ingredients

  • 2 cups white spelt flour
  • 4 to 6 tablespoons coconut sugar or natural cane sugar
  • 2 teaspoons baking powder
  • teaspoons cinnamon
  • ½ teaspoon fine grain sea salt
  • ½ teaspoon baking soda

Add-ins

  • ½ cup walnut halves, chopped (optional)
  • cups frozen or fresh blueberries

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin.
  2. Mash the bananas and measure out ¾ cup.
  3. Combine the mashed banana with almond milk, vinegar, maple syrup, and vanilla in a medium bowl without stirring yet.
  4. Melt the coconut oil in a small pot over low heat and set aside.
  5. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, cinnamon, salt, and baking soda.
  6. Stir the melted coconut oil into the wet mixture, then pour the wet ingredients onto the dry ingredients and stir until just combined.
  7. Gently fold in the walnuts and blueberries, being careful not to overmix.
  8. Spoon a heaping ¼ cup of batter into each muffin tin, filling them about ¾ full.
  9. Bake for 23 to 27 minutes until a toothpick comes out clean.
  10. Cool in the pan for 5 to 8 minutes, then transfer to a cooling rack for another 15 minutes.
