Ingredients

  • 1 package silken tofu (12.3 ounces)
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar (white, sherry, apple cider or champagne)
  • 1 tablespoon water
  • 1 tablespoon nutritional yeast flakes (optional)
  • 1 teaspoon kosher salt
  • 1 teaspoon white miso paste (optional)
  • ½ teaspoon pepper
  • 1 scallion fat scallion (white and green parts)
  • ¾ cup fresh tender herbs (packed)

Instructions

  1. Blend all ingredients except the herbs and scallions until smooth, adding water as needed.
  2. Scrape down the sides, add the herbs and scallions, and blend again.
  3. Taste and adjust salt and lemon juice as needed.
  4. Store in a jar in the fridge.
