Instructions
- Combine cucumber, tomato, and onion in a bowl and toss with olive oil, apple cider vinegar, salt, and pepper. Chill in the refrigerator.
- In another bowl, whisk together lime juice, maple syrup, and sea salt. Slowly add olive oil while whisking. Adjust flavor as needed.
- Add cantaloupe to a serving bowl and mix with the dressing. Gently toss in the cucumber-tomato-onion salad, discarding excess liquid.
- Garnish with fresh mint and serve.
