Summer Tomato & Cantaloupe Salad

Ingredients

Veggies

  • ½ cup thinly sliced cucumber
  • ½ cup cherry tomatoes (thinly sliced)
  • ¼ medium red onion (thinly sliced)
  • 1 Tbsp olive or avocado oil
  • 2 tsp apple cider vinegar
  • 1 pinch sea salt
  • 1 pinch black pepper

Dressing

  • 3 Tbsp lime juice
  • 1 Tbsp maple syrup
  • 1 pinch sea salt
  • 1 Tbsp olive or avocado oil

Cantaloupe

  • 3 heaping cups cantaloupe (cubed or scooped)
  • 2 Tbsp fresh mint

Instructions

  1. Combine cucumber, tomato, and onion in a bowl and toss with olive oil, apple cider vinegar, salt, and pepper. Chill in the refrigerator.
  2. In another bowl, whisk together lime juice, maple syrup, and sea salt. Slowly add olive oil while whisking. Adjust flavor as needed.
  3. Add cantaloupe to a serving bowl and mix with the dressing. Gently toss in the cucumber-tomato-onion salad, discarding excess liquid.
  4. Garnish with fresh mint and serve.
