Restaurant-Style Blender Salsa

Ingredients

  • 20 oz fresh tomatoes, chopped
  • ¼ cup chopped onion
  • 2 tablespoons jalapeño slices
  • 3 cloves garlic, peeled and chopped
  • ½ teaspoon coconut sugar
  • 2 teaspoons ground cumin
  • 2 limes juice (about 3 tablespoons)
  • ¾ teaspoon salt
  • ¾ teaspoon ground black pepper
  • 3-4 tablespoons parsley or cilantro, de-stemmed

Instructions

  1. Add all the ingredients to a blender.
  2. Blend for a few seconds until everything is incorporated, leaving some chunks if desired.
  3. Taste and adjust salt and seasonings as needed.
  4. If desired, strain the salsa over a sieve to remove excess liquid.
  5. Chill the salsa in the refrigerator for at least 30 minutes.
  6. Serve with tortilla chips and enjoy!
