Ingredients

The vegetables

  • 1 lb fresh or frozen green beans
  • 1 Tbsp olive oil
  • 1 large red bell pepper, sliced thin
  • 1 large onion, sliced

The sauce

  • ¼ cup reduced-sodium soy sauce
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp honey
  • 1 Tbsp grated ginger
  • 2 cloves garlic, minced

Instructions

  1. 1. Bring a large pot of salted water to a boil and blanch the green beans for 2 to 3 minutes until bright green and tender.
  2. 2. Drain the green beans and transfer them to a bowl of ice water to stop the cooking process.
  3. 3. Heat olive oil in a large skillet over medium heat and sauté the red bell pepper and onion for about 2 minutes.
  4. 4. Add the blanched green beans to the skillet and sauté for an additional 5 minutes until they start to soften and blister.
  5. 5. In a small bowl, whisk together soy sauce, sweet chili sauce, honey, ginger, and garlic, then pour the sauce over the vegetables in the skillet.
  6. 6. Cook for an additional 2 minutes, ensuring everything is coated, then remove from heat and serve.
