Garlic Sesame Green Beans

Ingredients

  • 1.5 lbs green beans, trimmed
  • ¼ cup rough chopped cashews
  • 2 tbsp sesame seeds
  • 2 tbsp avocado oil
  • 1 tbsp sesame oil
  • 6 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup low sodium soy sauce

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toast the cashews and sesame seeds on the baking sheet for 10 minutes and set aside.
  3. In a large dutch oven or saucepan, heat the avocado oil and sesame oil.
  4. Once hot, add the minced garlic and stir until fragrant.
  5. Add salt and pepper, then stir in the soy sauce.
  6. Add the green beans and toss to coat, cooking for a total of 10 minutes while stirring occasionally.
  7. After 10 minutes, turn off the heat and add the toasted cashews and sesame seeds, tossing to coat.
  8. Serve immediately.
