Chicken and Green Beans

Ingredients

  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil
  • 2 ½ cups green beans, trimmed and cut into 1 inch pieces
  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
  • 2 teaspoons minced garlic
  • ¼ cup low sodium chicken broth or water
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons corn starch
  • to taste salt and pepper

Instructions

  1. Heat 1 teaspoon of oil in a large pan over medium heat and cook the green beans for 3-4 minutes until tender.
  2. Remove the green beans and cover them.
  3. Wipe the pan clean, increase the heat to high, and add the remaining tablespoon of oil.
  4. Season the chicken with salt and pepper and cook in batches for 3-4 minutes on each side until golden brown.
  5. Add garlic to the pan and cook for 30 seconds.
  6. Return the green beans to the pan and cook for 2 more minutes.
  7. In a bowl, whisk together chicken broth, honey, and soy sauce.
  8. Mix cornstarch with a tablespoon of cold water in a small bowl.
  9. Pour the soy sauce mixture over the chicken and green beans, cooking for 30 seconds.
  10. Whisk in the cornstarch and bring to a boil, cooking for 1 more minute until the sauce thickens.
  11. Serve immediately, preferably over rice.
