Southern Green Beans

Ingredients

The beans

  • 1 pound fresh green beans, trimmed

The aromatics

  • ¼ cup onion, chopped
  • 2 cloves garlic, sliced

The meat

  • 4 slices thick-cut bacon
  • 1 whole bay leaf

The liquid

  • to cover chicken or ham broth

Seasoning

  • to taste salt
  • to taste pepper
  • 1-2 teaspoons white or red vinegar (optional)
  • to taste sweetener (optional)

Instructions

  1. Cook diced bacon in a pot over medium heat until crispy, about 6 minutes.
  2. If using ham, brown it in bacon grease or oil; if using smoked sausage, brown it as well.
  3. Wash and trim the green beans, chop the onions, and slice the garlic while the bacon cooks.
  4. Add the onions and bay leaf to the pot and sauté until softened, then add garlic and green beans.
  5. Cover the beans with broth and add vinegar and sweetener if desired.
  6. Bring to a boil, then reduce to a simmer and cook for 40 minutes to 1 ½ hours until tender.
