Ingredients

Main Ingredients

  • 1 pound fresh green beans, trimmed
  • ¼ cup onion, chopped
  • 2 cloves garlic, sliced
  • 4 slices thick-cut bacon
  • 1 whole bay leaf
  • to cover beans chicken or ham broth
  • to taste salt
  • to taste pepper

Optional Additions

  • 1-2 teaspoons white or red vinegar
  • to taste sweetener

Instructions

  1. Cook diced bacon in a pot over medium heat until crispy, about 6 minutes.
  2. If using ham, brown it in bacon grease or oil.
  3. Wash and trim the green beans, chop the onions, and slice the garlic while the bacon cooks.
  4. Add onions and bay leaf to the pot and sauté until softened.
  5. Add garlic and green beans, then cover with broth.
  6. Bring to a boil, then reduce heat and simmer for 40 minutes to 1½ hours until tender.
  7. Serve with the cooking juices.
