Ingredients

The Chicken

  • 1 to 1½ lbs boneless skinless chicken breasts
  • 1 Tbsp arrowroot powder or cornstarch
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 Tbsp olive oil

The Vegetables

  • 12 oz green beans
  • ¼ cup green onions
  • optional sesame seeds

The Sauce

  • ¼ cup chicken broth
  • 3 Tbsp low-sodium soy sauce
  • ¼ cup honey
  • 4 cloves garlic
  • ½ tsp grated ginger or ¼ tsp ground ginger
  • 2 tsp arrowroot powder or cornstarch

Instructions

  1. Prepare the chicken by cutting it into 1-inch cubes and coating it with a mixture of arrowroot powder, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet and cook the chicken until golden brown, then set aside.
  3. In the same skillet, sauté the green beans until tender yet crisp.
  4. Whisk together the chicken broth, soy sauce, honey, garlic, and ginger for the sauce.
  5. Combine the chicken back into the skillet with the green beans, pour the sauce over, and add the arrowroot mixture to thicken.
  6. Bring to a boil, then simmer until the sauce thickens and everything is well coated.
  7. Serve topped with green onions and sesame seeds, over rice.
