Ingredients

Tart Dough

  • cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • 9 tablespoons frozen butter, cut into small pieces
  • 1 large egg yolk

Key Lime Filling

  • 1 14-ounce can sweetened condensed milk
  • 4 large egg yolks
  • 2 teaspoons key lime zest
  • ¾ cup key lime juice

Instructions

  1. 1. Combine flour, powdered sugar, and salt in a food processor and pulse until mixed. Add butter and pulse until coarsely cut in.
  2. 2. Add egg yolk gradually, pulsing after each addition until the dough forms clumps. Knead gently to form a ball.
  3. 3. Butter a 9-inch tart pan and press the dough evenly into the bottom and sides. Freeze for at least 30 minutes.
  4. 4. Preheat the oven to 350°F. Mix sweetened condensed milk, lime zest, lime juice, and egg yolks in a bowl until smooth.
  5. 5. Pour the filling into the tart shell and bake until the filling is set around the edges, about 30 minutes.
  6. 6. Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
