Smoked Salmon Pizza

Ingredients

The crust

  • 1 cup whole wheat flour
  • 1 cup spelt flour
  • ½ cup oats

The toppings

  • 1 cup cottage cheese
  • 1 cup low fat mozzarella
  • 1 medium red onion
  • 4 oz smoked salmon
  • 1 cup arugula
  • 2 tbsp capers
  • 2 tbsp fresh dill

Instructions

  1. Prepare the whole grain pizza crust using whole wheat flour, spelt flour, and oats.
  2. Spread cottage cheese and low fat mozzarella on the crust.
  3. Add a few rings of red onion on top.
  4. Bake the pizza in the oven until the crust is cooked.
  5. Once out of the oven, top the pizza with smoked salmon, arugula, capers, fresh dill, and additional onion rings.
  6. Cut into slices and serve.
