Ingredients

The crust

  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • ¼ cup avocado oil
  • ¼ cup cold water
  • 1 ½ tbsp everything bagel seasoning

The quiche filling

  • 5 large eggs
  • 1 cup milk of choice
  • 1 tsp dried dill
  • ¼ tsp fine sea salt
  • 1 tbsp capers, chopped
  • ½ cup chopped tomatoes
  • 2 oz cream cheese or goat cheese
  • 4 oz smoked salmon

Instructions

  1. Preheat the oven to 375°F and prepare a pie dish with cooking spray.
  2. Mix the flours and everything bagel seasoning in a bowl. In another bowl, whisk together the oil and water, then combine with the flour mixture to form a dough.
  3. Press the dough into the pie dish evenly, covering the sides.
  4. In a separate bowl, whisk together the eggs, milk, dill, and salt. Stir in the capers and tomatoes.
  5. Pour the egg mixture into the unbaked crust, then dot with cream cheese and top with smoked salmon.
  6. Bake for 53-55 minutes until the quiche is set. Allow to cool for 15 minutes before slicing.
