Everything Bagel Quiche

Ingredients

Crust

  • 2 Tbsp. poppy seeds
  • 2 Tbsp. white and/or black sesame seeds
  • 4 tsp. dried garlic flakes
  • 4 tsp. dried onion flakes
  • tsp. kosher salt
  • 1 tsp. sugar
  • 2 cups all-purpose flour
  • ½ cup chilled unsalted butter

Filling and Assembly

  • 6 large eggs
  • ¾ cup heavy cream
  • ¾ cup sour cream
  • 2 tsp. kosher salt
  • ¾ tsp. freshly ground black pepper
  • 6 scallions thinly sliced
  • ½ small red onion, thinly sliced
  • sprigs dill, chopped
  • 1 Tbsp. chopped drained capers
  • 1 Tbsp. fresh lemon juice
  • 8 oz. smoked salmon, thinly sliced (optional)
  • to taste flaky sea salt
  • for serving lemon wedges

Instructions

  1. Combine poppy seeds, sesame seeds, garlic flakes, onion flakes, kosher salt, sugar, and flour in a food processor, then add butter and pulse until the mixture resembles coarse meal.
  2. Drizzle in ice water while pulsing until the dough holds together, then knead slightly and chill for at least 1 hour.
  3. Roll out the dough and transfer it to a pie dish, trim the edges, and chill for another 30 minutes.
  4. Preheat the oven to 350°F and bake the crust with foil and weights for 25-30 minutes, then remove the foil and bake until lightly browned.
  5. In a bowl, whisk together the eggs, heavy cream, sour cream, kosher salt, and pepper, then stir in scallions.
  6. Pour the egg mixture into the crust and bake at 300°F until set, about 80-90 minutes.
  7. Prepare the onion mixture by rinsing and drying the onion, then mixing with dill, capers, and lemon juice.
  8. Top the quiche with the onion mixture, sprinkle with sea salt, and serve with smoked salmon and lemon wedges.
