Instructions
- Combine poppy seeds, sesame seeds, garlic flakes, onion flakes, kosher salt, sugar, and flour in a food processor, then add butter and pulse until the mixture resembles coarse meal.
- Drizzle in ice water while pulsing until the dough holds together, then knead slightly and chill for at least 1 hour.
- Roll out the dough and transfer it to a pie dish, trim the edges, and chill for another 30 minutes.
- Preheat the oven to 350°F and bake the crust with foil and weights for 25-30 minutes, then remove the foil and bake until lightly browned.
- In a bowl, whisk together the eggs, heavy cream, sour cream, kosher salt, and pepper, then stir in scallions.
- Pour the egg mixture into the crust and bake at 300°F until set, about 80-90 minutes.
- Prepare the onion mixture by rinsing and drying the onion, then mixing with dill, capers, and lemon juice.
- Top the quiche with the onion mixture, sprinkle with sea salt, and serve with smoked salmon and lemon wedges.
