Ingredients

The base

  • 6 pieces bagels

The filling

  • 12 large eggs
  • ¼ cup unsweetened almond milk
  • teaspoon salt
  • teaspoon pepper
  • ¾ cup diced ham
  • ¼ cup diced onion
  • ¾ cup shredded cheddar cheese or cream cheese

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet with nonstick spray.
  2. Hollow out the bagel halves, leaving the crust intact, and set them aside.
  3. Whisk together the eggs, almond milk, salt, and pepper in a bowl.
  4. Place the bagel halves on the baking sheet and add 2 tablespoons of ham and 1 tablespoon of onion to each half.
  5. Pour the egg mixture into the bagels, filling them halfway first to allow soaking, then fill them completely.
  6. Top with cheddar cheese or cream cheese.
  7. Bake in the oven for 20-25 minutes until set and puffed.
