Fried Chicken Cutlet Bowl

Ingredients

The bowls

  • 1 cup uncooked basmati rice
  • 1 large red pepper, sliced thin
  • 1 large red onion, sliced thin
  • ½ tsp Diamond Crystal Salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups chopped spinach
  • ½ large cucumber, diced
  • to taste fresh basil for garnish

The Greek lemon sauce

  • 1 large juice of one lemon
  • ¼ cup olive oil
  • ¼ cup plain Greek yogurt
  • 1 tbsp dried oregano
  • 3 cloves garlic, pressed
  • tsp Diamond Crystal Salt
  • ½ tsp pepper

The crispy chicken

  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1 large egg
  • ¾ cup panko breadcrumbs
  • tsp Diamond Crystal Salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tsp za'taar
  • ¼ tsp chili flakes
  • ¼ tsp chili powder
  • for frying amount avocado oil

Instructions

  1. Cook the rice according to package directions and set aside.
  2. In a frying pan, heat 1 tbsp of olive oil and add the sliced pepper and onion along with salt, pepper, garlic powder, and onion powder. Cook for 5-8 minutes until softened.
  3. Prep the spinach and cucumber and set aside.
  4. Make the lemon sauce by whisking together lemon juice, olive oil, Greek yogurt, dried oregano, garlic, salt, and pepper. Refrigerate until needed.
  5. Slice the chicken breasts in half and pound them to about ½ inch thickness. Season with salt and pepper.
  6. Prepare the breading by mixing breadcrumbs with salt, pepper, garlic powder, onion powder, za'taar, chili flakes, and chili powder in one bowl, and whisk the egg in another bowl.
  7. Bread the chicken by dipping in the egg and then in the breadcrumb mixture, pressing gently to adhere.
  8. Heat avocado oil in a frying pan and shallow fry the breaded chicken for 3-4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
  9. Assemble the bowls by layering cooked rice, chopped chicken, spinach, cooked peppers, onions, and cucumber. Drizzle with lemon Greek sauce and garnish with fresh basil.
