Instructions
- Cook the rice according to package directions and set aside.
- In a frying pan, heat 1 tbsp of olive oil and add the sliced pepper and onion along with salt, pepper, garlic powder, and onion powder. Cook for 5-8 minutes until softened.
- Prep the spinach and cucumber and set aside.
- Make the lemon sauce by whisking together lemon juice, olive oil, Greek yogurt, dried oregano, garlic, salt, and pepper. Refrigerate until needed.
- Slice the chicken breasts in half and pound them to about ½ inch thickness. Season with salt and pepper.
- Prepare the breading by mixing breadcrumbs with salt, pepper, garlic powder, onion powder, za'taar, chili flakes, and chili powder in one bowl, and whisk the egg in another bowl.
- Bread the chicken by dipping in the egg and then in the breadcrumb mixture, pressing gently to adhere.
- Heat avocado oil in a frying pan and shallow fry the breaded chicken for 3-4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
- Assemble the bowls by layering cooked rice, chopped chicken, spinach, cooked peppers, onions, and cucumber. Drizzle with lemon Greek sauce and garnish with fresh basil.
