Ingredients

  • 3 tbsp Wholesome Yum Coconut Flour
  • 3 large Eggs
  • 2 oz Cream cheese (softened at room temperature)
  • 2 tbsp Unsalted butter (or coconut oil)
  • ¼ cup Heavy cream (or any milk of choice)
  • 1 tbsp Besti Monk Fruit Allulose Blend (or any sweetener)
  • ½ tsp Baking powder
  • ¼ tsp Xanthan gum (optional)
  • ½ tsp Vanilla extract (optional)

Instructions

  1. Preheat your waffle maker.
  2. Blend all ingredients together until smooth.
  3. Let the batter sit for a few minutes to thicken.
  4. Scoop a scant 1 cup of batter into the waffle maker and cook according to manufacturer instructions until steam stops coming out.
  5. Repeat with the remaining batter.
  6. For crispier waffles, heat them in the oven or toaster after cooking.
