Instructions
- 1. Preheat the oven to 425°F and prepare the chipotle peach relish.
- 2. Place the salmon fillet on a lined baking sheet, drizzle with olive oil, and rub in the garlic, salt, and pepper.
- 3. Arrange the sliced tomatoes around the salmon and squeeze lime juice over everything, adding lime slices on top.
- 4. Bake for 10 to 12 minutes until the salmon is cooked through and reaches an internal temperature of 145°F.
- 5. Remove from the oven and garnish with chipotle peach relish, cilantro, and red pepper flakes.
