Ingredients

The salmon

  • 1 lb wild caught salmon fillet
  • ½ teaspoon light olive oil or avocado oil
  • ¼ teaspoon minced garlic
  • a pinch sea salt flakes
  • to taste crushed black pepper
  • 8 ounces yellow or red cherry tomatoes, sliced
  • ½ fresh lime juiced
  • 3 to 4 slices lime

The topping

  • 1 serving Chipotle Peach Relish
  • to taste fresh cilantro, torn
  • to taste red pepper flakes

Instructions

  1. 1. Preheat the oven to 425°F and prepare the chipotle peach relish.
  2. 2. Place the salmon fillet on a lined baking sheet, drizzle with olive oil, and rub in the garlic, salt, and pepper.
  3. 3. Arrange the sliced tomatoes around the salmon and squeeze lime juice over everything, adding lime slices on top.
  4. 4. Bake for 10 to 12 minutes until the salmon is cooked through and reaches an internal temperature of 145°F.
  5. 5. Remove from the oven and garnish with chipotle peach relish, cilantro, and red pepper flakes.
