Ingredients

The dough

  • ¾ cup warm water
  • teaspoons sugar
  • 1 package active dry yeast (2¼ teaspoons)
  • 1 teaspoon kosher salt
  • cups all purpose flour
  • 1 tablespoon butter (melted)

The hot dogs

  • 6 hot dogs

The boiling solution

  • 12 cups water
  • 2 tablespoons baking soda

The egg wash

  • 1 egg beaten

Optional toppings

  • sesame seeds
  • poppy seeds
  • dried onion
  • coarse salt

Instructions

  1. Mix warm water, sugar, and yeast in a stand mixer bowl and let sit for 5 minutes until bubbly.
  2. Add flour, salt, and melted butter to the yeast mixture and mix on medium speed until a ball forms.
  3. Remove dough, spray the bowl with cooking spray, return dough, cover, and let rise in a warm area for about 1 hour.
  4. Preheat the oven to 450°F and line a sheet pan with parchment paper.
  5. In a large pot, combine water and baking soda, then bring to a boil.
  6. Divide the dough into equal pieces, roll each into a rope, and wrap around each hot dog, sealing the ends.
  7. Dip each wrapped hot dog in the boiling solution for 30 seconds per side and place on the sheet pan.
  8. Brush with beaten egg and add any desired toppings before baking.
  9. Bake for about 15 minutes until deep golden brown.
